Preparation Steps
Langoustine Preparation
STEP1 Soak langoustines in cold water until fully thawed.
STEP2 Use scissors to remove all the legs.
STEP3 Make shallow cuts on the head and tail with a knife, then open the langoustines with both hands, and rinse out the blood vessels and innards.
STEP4 Season with a pinch of salt, black pepper, and olive oil.

Thai Yellow Curry Method
STEP1 Dice all the ingredients for the curry paste and set aside in a small bowl.
STEP2 Heat a pan with some olive oil, then add all the aromatics and sauté until they change colour (or until softened and fragrant).
STEP3 Add the banana, 90g curry paste, 100ml vegetable stock (can be substituted with water), and 500g coconut milk.
STEP4 Stir well and simmer over low heat for 15 minutes.
STEP5 Blend with a blender, then strain to make the sauce smoother and thicker.

Star Chef Grilling Method
STEP1 Set the high-temperature steak oven to 600°C and preheat for 5 minutes.
STEP2 Place the seasoned langoustines on a baking tray, position it on the second rack, and grill for 2 minutes.
STEP3 Finally, evenly drizzle the curry sauce over the langoustine meat and rice, and it's ready to enjoy!
